We begin with our premium aged rum base, carefully selected from barrels that have been aged for 3-5 years in American oak. This base provides the foundation of caramel and vanilla notes that will complement our proprietary spice blend.
Our master blenders work directly with Caribbean spice farmers to source the highest quality ingredients. Whole cinnamon, nutmeg, cloves, allspice, and other botanicals are carefully inspected, cleaned, and prepared according to our time-honored methods to release their optimal flavor profiles.
Using our proprietary infusion technique, spices are macerated in small batches of rum for periods ranging from 7 to 30 days, depending on the ingredient. This gradual extraction process ensures that each spice imparts its full spectrum of flavors without overwhelming the rum's natural character.
After infusion, the spiced rum undergoes a secondary aging period in specially charred oak barrels. This critical step allows the flavors to marry together while the wood imparts additional complexity, smoothness, and subtle notes of caramel and vanilla.
Our Master Blender meticulously combines different spice-infused rums along with our signature caramel essence to create the precise flavor profile that defines The Big Cane Spiced Rum. After blending, the rum rests for at least 30 days to allow all flavors to harmonize before bottling.
