Our London Dry Gin brings a bold Caribbean twist to a classic spirit. Infused with traditional juniper and coriander, but elevated with exotic botanicals sourced directly from the Caribbean islands. Experience the lush notes of hibiscus, allspice, and citrus creating a vibrant, aromatic profile that's perfect for crafting extraordinary cocktails or savoring in a sophisticated G&T.
We hand-select 14 botanicals, combining traditional London Dry ingredients with exotic Caribbean varieties. Our master distiller personally sources rare hibiscus flowers, native Caribbean allspice berries, island-grown citrus peels, and aromatic herbs to create a unique botanical blend.
Unlike many gins that steep botanicals directly in the spirit, we use our proprietary vapor infusion method. Botanicals are suspended in copper baskets above our custom-designed still, allowing the rising vapors to extract the purest, most delicate flavors and aromas without any harshness.
We distill in small batches of no more than 500 liters at a time in our copper pot still. This artisanal approach allows our master distiller to carefully control the entire process, making precise cuts to capture only the "heart" of the distillation where the finest flavors reside.
We reduce our gin to bottling strength using only the purest filtered rainwater collected on the island. This water, naturally filtered through volcanic rock layers, adds a distinctive mineral character that enhances the spirit's mouthfeel and flavor integration.
Before bottling, our gin rests for three weeks in neutral vessels. This crucial step allows the botanicals to fully harmonize and the flavors to marry perfectly, creating a remarkably smooth and balanced spirit that maintains both the classic gin character and our distinctive Caribbean twist.
